"The components from Epinottes, Chatains, Vaillons and Minots have just been blended. Mid lemon yellow in colour, though the bouquet is not yet in place. There is no shortage of stones, a layer of lemon meringue on top, a slight bitterness to finish. A little sunnier in fruit profile than a classic Vaillons. Drink from 2027-2032. Romain combines great winemaking and knowledge of his family's vineyards with an easy charm and dynamism. He has converted much of the estate to organic viticulture and uses a mixture of stainless steel, older wooden barrels and other inert vessels in which to mature the wines, varying the élevage for each cuvée to suit the terroir.
